Back in 2016, shortly after our first ever bottling, Wolfburn was invited to create a whisky for the Caithness Viking Festival. After much discussion, some clever soul suggested incorporating elements of the Viking runic alphabet into the label design. The idea took off and the one-off bottling instead became the first in the iconic Kylver series.

Each edition of the series is different, but they all have one thing in common: the casks used are special. This can be for a variety of reasons: rarity, quality, particularly excellent maturation… but it’s always something a little different to the norm.  Consisting of just 990 bottles, Kylver#7 has been crafted from some of our oldest peated spirit, dating from 2014, laid down in Oloroso sherry hogsheads for a little over six years. The combination of lightly-peated (10ppm) spirit combined with sherry oak has given this whisky a truly marvellous depth of flavour.

NOSE
Soft and expressive: honey, caramel, and a beautiful hint of lightly-toasted oak.

TASTE
Gentle cereal notes lead the way – but sherry sweetness is not far behind, building to a crescendo on the palate, with honeysuckle and jasmine notes coming to the fore. There’s a spectacular depth of flavour – truly sumptuous.

FINISH
Heady aromas of fruit and summer meadows linger at the end.
